Хрусткі й соковиті чебуреки: як приготувати апетитну страву

Чебуреки можуть бути з різними начинками, але класичною є м’ясна.

Тонка хрустка скоринка й соковита, м’ясна начинка з травами і спеціями – так можна описати чебуреки. Вони являють собою пиріжок із прісного тіста з м’ясним фаршем та гострими приправами, засмажений в олії.

Загалом чебуреки можуть бути з різними начинками, але з м’ясом – класичний рецепт.

Чебуреки

  • Борошно – 3 ст.
  • Окріп – 1 ст.
  • Сіль – 1 ч. л.
  • Олія – 1 ст. л.
  • Горілка (за бажанням) – 1 ст. л.
  • Фарш м’ясний – 350 г
  • Цибуля ріпчаста – 1 шт. (150 г)
  • Сіль, перець чорний мелений – за смаком
  • Коріандр – 1/3 ч. л.
  • Вода – 100-150 мл

У борошні зробити поглиблення. Відміряти 250 мл крутого окропу, додати до нього сіль та олію.

Перекласти отриману масу на стіл. Вимісити тісто до гладкого стану приблизно 7 хвилин (можна скористатися кухонним комбайном).

Покласти тісто в миску, змастити трохи олією, накрити харчовою плівкою й залишити на півгодини.

Приготування фаршу. Подрібнити або дрібно нарізати цибулю. Додати до фаршу цибулю, сіль, коріандр та чорний мелений перець. Перемішати і потроху вливати воду. Фарш має стати кашоподібним. Накрити харчовою плівкою і відправити на 30 хвилин у холодильник.

Далі розділити тісто на 12 частин. Розкачати кожну до товщини 1 мм, але не до прозорості. Якщо тісто прилипає до поверхні, присипати трохи борошном. Викласти на половину коржа тонкий шар фаршу (багато фаршу класти не потрібно).

Для кращого ліплення можна змастити краї розбовтаним яйцем або білком.

Закрити другою половиною, намагаючись не залишати всередині повітря. Зліпити краї. По краях тіста пройтися виделкою, акуратно натискаючи, щоб не порвати тісто.

Нагріти в сковороді олію (шар 1-1,5 см). Температуру можна перевірити, опустивши шматочок хліба – навколо нього має розпочатися бурління олії, але не дуже сильне.

Обсмажити чебуреки з двох боків. Викладати готові чебуреки на тарілку, застелену паперовими рушниками або серветками, щоб прибрати зайву олію.

Чебуреки з дріжджового тіста

  • Вода мінеральна (з газом) – 200 мл
  • Дріжджі (свіжі) – 13 г
  • Цукор – 1 ч. л.
  • Борошно пшеничне – 350 г
  • Олія – 3 ст. л.
  • Сіль – 0,5 ст. л. (можна трохи менше)
  • Філе будь-яке – 350 г
  • Цибуля ріпчаста – 160 г
  • Сіль – за смаком
  • Вода – 25 мл
  • Суміш перців – 1 ч. л.
  • Спеції (за бажанням) – 0,5 ч. л.

Приготування фаршу. М’ясо та цибулю пропустити через м’ясорубку. Додати сіль, суміш перців і спеції за бажанням. Поступово додати воду, ретельно перемішати.

Приготування тіста. У мінеральну воду кімнатної температури додати дріжджі, сіль та цукор, дати настоятися 5 хвилин.

У борошно влити воду з дріжджами, сіллю і цукром. Почати замішувати тісто, додати олію. Муки може знадобиться більше або менше, залежить від її якості. Замісити круте, але м’яке й еластичне тісто. Добре його вимісити і залишити на 10 хвилин під мискою.

Розділити тісто на однакові шматочки, кожен шматочок розплющити, сформувати кульки. Тісто прикрити плівкою, щоб не завітрилося.

На присипаній борошном дошці розкачати тісто на коржі. На один бік коржа викласти частину начинки, розподілити її рівномірно. Скласти корж навпіл, щоб сторони збіглися, зверху добре притиснути долонею, щоб усередині не було повітря, й добре защипати краї тіста пальцями рук. Виделкою, занурюючи її в борошно, притиснути край чебурека.

Чебуреки викласти на пекарській папір або чистий кухонний рушник, прикрити плівкою, поки працюємо з іншими кульками тіста.

У сковороду, сотейник або каструлю з антипригарним покриттям налити олію. Розігріти її до такої температури, щоб чебуреки не підгорали, але й не залишалися всередині сирими. Викласти заготовки чебуреків в олію й обсмажувати з обох боків. Потім викласти їх на паперовий рушник, щоб увібрався в папір зайвий жир.

Чебуреки з м’ясом, сиром і помідорами

  • Борошно пшеничне – 400 г
  • Гаряча вода – 200 мл
  • Сіль – 0,5 ч. л.
  • Олія – 3 ст. л.
  • Фарш м’ясний (свинячо-яловичий) – 400 г
  • Цибуля ріпчаста – 100 г
  • Сіль – 0,5 ч. л.
  • Перець чорний мелений – за смаком
  • Сир голландський – 100 г
  • Помідори (середні) – 4 шт.
  • Зелень (подрібнена) – 2 ст. л.

Приготування тіста. У просіяне борошно влити гарячу воду з сіллю та олією. Ретельно вимісити тісто. Скачати його в кулю і дати відлежатися.

Можна додати мелений перець за смаком і дрібно посічену зелень. Бажано також вимішати фарш з додаванням трішки води або молока, щоб він став соковитішим.

Помідори нарізати на тонкі кружальця. Сир натерти на тертці.

Поділити тісто на кульки й тонко розкачати на круглі коржі.

Покласти на тісто столову ложку фаршу й розподілити його на половині коржа. Зверху викласти кружечки помідорів, їх посипати тертим сиром.

Зліпити чебуреки. Посмажити їх у фритюрі на середньому вогні. Готові чебуреки скласти в каструльку й накрити кришкою, щоб вони стали м’якими.

Temperature

Some recipe writers tend to use bake when they call for the food to be cooked at a lower temperature, such as 350°, while using roast for higher temperatures, such as 425°. But this is definitely not always the case.

What else can bake and roast mean?

The words roast and bake also have other common applications in the context of food preparation.

Obviously, the words bake and baking are also used in the context of what we call baked goods, like breads and cakes. This type of baking is also most commonly done in an oven, but unlike baking chicken, for example, it often involves a more significant transformation in shape and form—picture a time-elapsed image of soft dough or semiliquid batter rising into fully-formed deliciousness.

This is one of the reasons why a distinction is sometimes made between baking and cooking. Baking in the sense of dough- and batter-based concoctions is most closely associated with breads and desserts, while cooking is associated with meals and savory things. But the two can certainly overlap—pot pies and pizzas are both baked and savory. In this way, baking can be thought of as one type of cooking in the general sense of food preparation.

The verb roast and the adjective roasted aren’t often used in the context of baking, but they can be, such as when you’re incorporating a roasted element into a baked good (using roasted strawberries in a cake, for example).

When recipes use the label baked chicken, the chicken is often cooked in a pot with a closed lid, in a sauce, or as one ingredient in a mixture (like the aforementioned casseroles). Sometimes, the word baked is used when the recipe calls for a lower temperature.

In contrast, using the term roasted chicken typically indicates that it will be cooked at a high temperature and in an open pan or on a rack. The goal is usually to achieve a crispy skin—which means that skinless chicken cooked in the oven may be more likely to be called baked than roasted.

Still, some recipes use the words bake or baked in reference to chicken prepared with the roasting method just described.

baked potatoes vs. roasted potatoes

The term baked potato is a set phrase that refers to a specific thing: a potato cooked whole—in its skin (sometimes in foil). While baked potatoes certainly meet the qualifications to be considered roasted, everyone knows what to expect when they order a baked potato.

Potatoes labeled as roasted potatoes commonly consist of potatoes that have been cut into pieces, tossed in oil, and cooked in the oven until golden brown. Very small potatoes may be cooked this way without even being cut, but they’re still likely to be called roasted.
